Made with soaked cashews, coconut and dates, these creamy vegan ice cream bars are then coated in a delicious coffee chocolate ganache. Cool off with these delicious bars.

ingredients

  • 1 cup raw cashews soaked in water overnight
  • 400 millileters coconut cream
  • 1 small espresso shot
  • 1/4 cup date paste, honey or syrup of choice
  • 1 teaspoon vanilla extract
  • Pinch of salt

ingredients

Ganache

  • 1/2 cup dairy free chocolate chips
  • 1/2 cup Nut butter of choice
  • 1/4 cup coconut cream

Method

  • Step 1

    Place all of the ice cream ingredients in a high speed blender and blend until smooth, pour in to ice cream moulds to set.

  • Step 2

    Melt all of the ganache ingredients together over low heat, dip the mini magnums and decorate & enjoy!
