ingredients
- 1 cup raw cashews soaked in water overnight
- 400 millileters coconut cream
- 1 small espresso shot
- 1/4 cup date paste, honey or syrup of choice
- 1 teaspoon vanilla extract
- Pinch of salt
ingredients
Ganache
- 1/2 cup dairy free chocolate chips
- 1/2 cup Nut butter of choice
- 1/4 cup coconut cream
Method
Step 1
Place all of the ice cream ingredients in a high speed blender and blend until smooth, pour in to ice cream moulds to set.
Step 2
Melt all of the ganache ingredients together over low heat, dip the mini magnums and decorate & enjoy!
