ingredients

  • 1 cup cooked, to serve brown rice noodles
  • 1 cup Spiralized carrots
  • 1 cup Spiralized sweet potato
  • 1 cup Spiralized zucchini
  • 1/2 cup Diced purple cabbage
  • 1/2 Ripe avocado
  • 1/3 cup Chopped snap peas
  • 1/3 cup Cooked corn
  • 1/3 cup Fresh or defrosted peas
  • 1/4 cup Salted peanuts
  • 1/4 cup Chopped cilantro
  • 1/4 cup Sliced spring onions
  • 1/2 cup Peanut butter
  • 1/4 cup Maple syrup
  • 1/4 cup Soy sauce
  • 1/4 cup Coconut cream
  • 1 tablespoon Rice vinegar
  • 3 tablespoons Sriracha
  • Salt to taste

Method

  • Step 1

    Mix the salad dressing ingredients by placing the peanut butter, maple syrup, soy sauce, coconut cream, rice vinegar, sriracha and salt in a bowl and set aside while you make the rest of the salad.

  • Step 2

    Place all of the salad ingredients in a big bowl, top with the salad dressing and mix well.

  • Step 3

    Serve as a main or as a side salad, store in the fridge for 2-3 days.
