ingredients
- 1 cup cooked, to serve brown rice noodles
- 1 cup Spiralized carrots
- 1 cup Spiralized sweet potato
- 1 cup Spiralized zucchini
- 1/2 cup Diced purple cabbage
- 1/2 Ripe avocado
- 1/3 cup Chopped snap peas
- 1/3 cup Cooked corn
- 1/3 cup Fresh or defrosted peas
- 1/4 cup Salted peanuts
- 1/4 cup Chopped cilantro
- 1/4 cup Sliced spring onions
- 1/2 cup Peanut butter
- 1/4 cup Maple syrup
- 1/4 cup Soy sauce
- 1/4 cup Coconut cream
- 1 tablespoon Rice vinegar
- 3 tablespoons Sriracha
- Salt to taste
Method
Step 1
Mix the salad dressing ingredients by placing the peanut butter, maple syrup, soy sauce, coconut cream, rice vinegar, sriracha and salt in a bowl and set aside while you make the rest of the salad.
Step 2
Place all of the salad ingredients in a big bowl, top with the salad dressing and mix well.
Step 3
Serve as a main or as a side salad, store in the fridge for 2-3 days.
