ingredients
- 2 cups rolled oats
- 1/2 salted date caramel
- 1/4 teaspoon salt
- 1 3/4 ounces cacao paste
- 1 1/4 ounces cacao butter
- 6 medjool dates
- 1/2 cup peanut butter
- Hot water
- 1 teaspoon vanilla extract
- 1/3 teaspoon salt
Method
Step 1
Place the oats in a bowl and add in the salted date caramel and the salt and mix well.
Step 2
Press into a parchment paper-lined bread tin and flatten the oat bar batter 3cm in thickness and place it in the freezer to set.
Step 3
Place the cacao paste in a bowl and place it either over a bowl with hot water or over a boiling pot on the stove while the cacao paste melts, add in the cacao butter, and let both melt together.
Step 4
Remove from the heat and leave too cool until a bit thicker.
Step 5
Add in a pinch of salt and pour the cacao mixture over the oat bars.
Step 6
Add extra salt on top if you like, slice, and place in the fridge for up to one week & enjoy!
Step 7
For the salted date caramel place the dates in hot water for thirty minutes to soak until soft.
Step 8
Add the de-pitted dates in a blender with the rest of the caramel ingredients and blend until smooth.
Step 9
Add in some hot water to smooth it out and place in a glass container in the fridge to cool.
