ingredients

  • 2 cups washed Baby potatoes
  • 1/2 cup toasted Almonds
  • 1/3 Pomegranate jewels
  • 1 tsp Harissa paste or powder
  • 1 tbsp Agave or maple syrup
  • 1/2 tsp Garlic flakes
  • 2 tbsp Leon juice
  • Good quality olive oil
  • Salt to taste
  • Cracked black pepper
  • Fresh dill

Method

  • Step 1

    Preheat oven to 175 degrees Celcius.

  • Step 2

    Wash and dress the potatoes with the harissa, garlic flakes, maple syrup, lemon juice, olive oil, salt and pepper.

  • Step 3

    Place the potatoes on a parchment paper-lined baking tray and bake the potatoes for 15-18 minutes until golden.

  • Step 4

    Serve with toasted almonds, pomegranate jewels and fresh dill.
