Coconut and Chocolate Holes

ingredients

  • 3 cups shredded coconut, divided
  • 1 cup rolled oats
  • pinch of Kosher salt
  • 1 teaspoon vanilla extract
  • 4 cups coconut oil, melted and divided
  • 2/3 cup maple syrup, divided
  • 1/3 cup packed Cacao powder
  • 1 cup shredded Coconut

Method

  • Step 1

    Place 2 cups of coconut and the oats in a high speed blender and pulse until it resembles fine bread crumbs.

  • Step 2

    Add in the 3 1/2 cups melted coconut oil, maple syrup, vanilla extract and a pinch of salt and blend further until the dough comes together to roll in to balls.

  • Step 3

    Roll in to balls and place on a plate and then in the freezer to set for at least thirty minutes.

  • Step 4

    Make the glaze by mixing the remaining melted coconut oil, maple syrup, cacao powder and a pinch of salt.

  • Step 5

    Dip each ball in to the glaze until fully covered and by help with a spoon remove and immediately roll in remaining shredded coconut.

  • Step 6

    Place in the fridge and enjoy as desired.
