ingredients

  • 200 gram Gathi Kochu/ Arbi
  • 1 pieces Tomato
  • 1 pieces Onion
  • 6 pieces Garlic Cloves
  • 1 teaspoons Coriander Powder
  • 1 teaspoon Garam Masala Powder
  • 1 teaspoons Turmeric Powder
  • To Taste Salt
  • To Taste Sugar
  • 1 pieces Dry red Chilli
  • 1/2 cups Mustard Oil
  • 1 pieces Lemon

Method

  • Step 1

    Peel off the skin of the Arbi. Cut them horizontally. Wash them thoroughly before putting them for boiling. Put them in water. Squeeze half lemon and add the juice in water . Boil the arbis.( This helps in reducing chances of itching of throat caused due to arbis. Applied to people who are allergic)

  • Step 2

    Make a paste of tomato and onion and garlic cloves. Put mustard oil in pan. Fry the arbis. Set them aside after frying.

  • Step 3

    Now temper the same oil with 1 dry red chill and 1/2 tsp sugar. Add the masala paste. Add 1 tsp Coriander Powder. Add 1 tsp Turmeric powder. Add salt and sugar to taste.

  • Step 4

    Cook till raw smell of the masala goes away. Add the fried arbis. Toss them carefully. Add water as much needed and cover with a lid. Cook in low flame for few minutes.

  • Step 5

    As kochus/arbis get coated with the masala and water dries up, sprinkle 1 Tsp Garam Masala Powder and squeeze 1/2 lemon and add the juice. Don't cook after adding the juice. Just mix the juice after putting off the flame. Ready to serve.
