EGG FRITTER CURRY

"Fritters are very popular in India specially in Kolkata. We Bengalis love to munch on crispy fritters over a cup of tea/coffee. We even serve fritters with a hot bowl of rice and dal. But this recipe of today is a curry recipe. I have cooked curry with fritters. It's delicious in taste. You can even use this curry with bread or tortilla."

ingredients

  • 3 Eggs
  • 2 medium Potato
  • 1 medium Onion
  • 2 sliced Garlic cloves
  • 1 teaspoons Turmeric powder
  • 1 teaspoons Coriander powder
  • 1 medium Tomato
  • To Taste Salt
  • To Taste Sugar
  • cup Refined oil

Method

  • Step 1

    Peel off the skin of potatoes and boil them. Drain out the water and take potatoes on plate. Mash them with hand or spatula. Beat eggs and put them one by one in the plate. Chop the onion and put it in the same.Add 1 tsp salt and 1/3 tsp turmeric powder. Now mix everything.

  • Step 2

    Put 2-4 spoon of refined oil in pan. Now take the batter. Make small balls out of the batter and put in pan for frying. Fry them till it becomes golden outside. Drain out the excess oil and set aside.

  • Step 3

    Take the tomato and cut into fine pieces. Now put the chopped tomatoes in the pan. If needed add teaspoon of oil. Toss till tomatoes become mushy. Add salt, coriander powder and turmeric powder. Add sugar. Add water and cook in medium flame for few minutes. Add the fried fritters. Cook for few minutes and transfer to a plate.
