Method

  • Step 1

    Take an Eggplant. Slit it . Put Garlic cloves inside it. Rub dollops of mustard oil and salt over its skin. Take a chapati roasting net. Put the eggplant on it. Roast for 20-25 minutes.

  • Step 2

    Boil onion and mash it using mortar and pestle. After roasting the eggplant, scrape off its charred skin and scoop out the flesh. Add the mashed onion, salt to taste and pinch of sugar. Mix everything with fingers.

  • Step 3

    Serve hot or cold with rice or roti.
