ingredients

  • 1 litre Milk
  • 500 milliliter Milk
  • 12 tablespoons Milk Powder
  • 8 pieces Cardamom Pods
  • 10 pieces Almond
  • 6 pieces Lemon
  • 200 gram Crystal Sugar
  • 4 teaspoon Ghee

Method

  • Step 1

    Put milk in a bowl. Start boiling. Squeeze the juice of lemon and put it in a bowl. As milk starts boiling, add the lime juice.

  • Step 2

    As soon lime juice is added, milk starts curdling. In case needed,add some more juice. When greenish whey can be seen, extract the chana. Drain out of the water.

  • Step 3

    Put bowl/ pan in oven. Put the chana. Add 4-6 spoon milk powder. Start mixing with a spatula, so that no lumps are formed.

  • Step 4

    Add the crystal sugar. ( It dissolves quickly, also makes the mixture less runny). Mix everything.

  • Step 5

    Crush the cardamom pods with a mortar-pestle. Chop the Almonds. Put them subsequently in the bowl.

  • Step 6

    Mix everything. Cook this phase in low flame. Make sure chena doesn't get stick to the bottom of the pan.

  • Step 7

    Take a plate. Brush ghee on it. Transfer the chena on the plate. Add 6 spoon milk powder.( Measurement of milk powder in this stage varies depending on the requirement).

  • Step 8

    Start kneading. Don't overdo it, make sure chena stays soft. Grease palms with ghee. Make chena balls, flatten them with palms. Put Almond slice on each.

  • Step 9

    Store in a refrigerator for 10-15 minutes. Make sure to cover it otherwise Sandesh will dry. Enjoy!!
