  • 6 boneless, skinless chicken thighs
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon Italian seasoning, divided
  • 3 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 1 cup white wine (or substitute with chicken broth)
  • 1 1/2 cups RiceSelect® Royal Blend® Rice
  • 1 cup chicken broth, adjusted as needed
  • Juice of 1 lemon

Method

  • Step 1

    Season the chicken thighs with salt, pepper, and ½ tablespoon of Italian seasoning.

  • Step 2

    In a large pan over medium-high heat, melt the butter. Sear the chicken thighs for 4-5 minutes per side, until browned. Remove the chicken from the pan and set aside.

  • Step 3

    Add the minced garlic to the same pan and sauté for about 2 minutes until fragrant.

  • Step 4

    Pour in the white wine to deglaze the pan, scraping up any browned bits. Let it cook for 2 minutes.

  • Step 5

    Stir in the RiceSelect® Royal Blend® Rice, chicken broth, lemon juice, salt, pepper to taste, and the remaining ½ tbsp of Italian seasoning. Bring the mixture to a boil.

  • Step 6

    Add the seared chicken back into the pan. Reduce the heat to low, cover, and cook for 15 minutes. Check the rice after 10 minutes—you may need to add more chicken broth if necessary.

  • Step 7

    Continue cooking until the rice is tender and the chicken reaches an internal temperature of 165°F.

  • Step 8

    Serve the lemon herb chicken with your favorite steamed or roasted veggies for a complete meal.
