Step 1
Non stick pan and heat control are key, I start it on a medium heat then drop it down to low-medium and slowly let the eggs form soft, but large curds. So you're not constantly agitating the eggs, you're letting it set and then pushing it to the center. If you're afraid of eating eggs this runny then use pasteurized eggs.
