Chilled Tomato and Peach Soup with Coconut Jalapeño Ice Cubes

Meatless Monday! ???? Thanks to my lovely roomie @elisabethvdvijver I am cooking more and more vegetarian meals. Tonight on the menu: Zucchini goat cheese frittata ???? Ingredients for 3 persons: * 1 zucchini * 200 grams of chestnut mushrooms * 180 grams of soft goat cheese * 9 bio organic eggs * 2 cloves of garlic * Fresh parsley * Dried thyme * Spring onion Cut the mushrooms in slices and fry them in olive oil and garlic for a few minutes. Cut the zucchini into thin slices using a peeler. Take a baking dish and grease it with some olive oil. Roll the zucchini in nice rolls and place them in the baking dish. Mix the eggs with garlic, 2 spring onions in thin slices, fresh parsley, dried thyme, salt and pepper. Add the add mixture in the baking dish. Divide the mushrooms over the dish and finish by dividing the goat cheese in small pieces. Put in the oven for 30 minutes at 180 degrees Celsius. Garnish with fresh parsley and spring onion. Enjoy! ????
