ingredients
- 1 pound ground turkey
- 1 cup mushrooms, finely chopped
- 1/4 cup fresh parsley
- 3 cloves garlic
- 2 tablespoons Thai Kitchen Red Curry Paste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil (for cooking)
- 1 bell pepper (any color), thinly sliced
- 1 can coconut milk
- 1 tablespoon fish sauce
- minced ginger
- minced garlic
- Fresno pepper
- Thai basil or regular basil
Method
Step 1
Chop up parsley, mushrooms, and cloves of garlic in good processor. Add ground Turkey, mushroom mixture, onion and garlic powder, salt, and 1/2 red curry paste to bowl and mix
Step 2
Using 1/4 measuring cup make meatballs and place on baking dish. Bake for 20 minutes and then broil for 5 minutes
Step 3
While they are baking, sauté the onions, peppers, minced garlic and ginger. Add in curry paste and continue sautéing. Once tender, add in coconut milk and let simmer.
Step 4
Add in meatballs once they are done and coat with sauce. Garnish with Fresno peppers and basil and serve over cauliflower/brown rice mixture Enjoy 💫
