ingredients

  • 1 loaf french bread, sliced on a bias in to ¾ inch thickness
  • 1 (10 ounce can) Tomato Love Original Diced Tomatoes with 2X More Chilies, drained
  • 3 tablespoons cilantro, chopped and divided
  • 2 garlic cloves, minced
  • Kosher Salt, to taste.
  • Black Pepper, to taste.
  • 1/2 teaspoon cumin
  • 1/4 juice of lime
  • 1 teaspoons olive oil
  • 1/2 cup mexican cheese blend, shredded

Method

  • Step 1

    In a medium bowl, combine drained tomatoes, 2 tablespoons cilantro, garlic, salt, pepper, cumin, lime juice, and olive oil and mix well.

  • Step 2

    On a tray, lay slices of french bread closely together and evenly divide tomato mixture amongst each slice.

  • Step 3

    Sprinkle top with shredded cheese.

  • Step 4

    Transfer to serving dish, garnish with remaining chopped cilantro.

  • Step 5

    Serve immediately.
