ingredients
- 1 loaf french bread, sliced on a bias in to ¾ inch thickness
- 1 (10 ounce can) Tomato Love Original Diced Tomatoes with 2X More Chilies, drained
- 3 tablespoons cilantro, chopped and divided
- 2 garlic cloves, minced
- Kosher Salt, to taste.
- Black Pepper, to taste.
- 1/2 teaspoon cumin
- 1/4 juice of lime
- 1 teaspoons olive oil
- 1/2 cup mexican cheese blend, shredded
Method
Step 1
In a medium bowl, combine drained tomatoes, 2 tablespoons cilantro, garlic, salt, pepper, cumin, lime juice, and olive oil and mix well.
Step 2
On a tray, lay slices of french bread closely together and evenly divide tomato mixture amongst each slice.
Step 3
Sprinkle top with shredded cheese.
Step 4
Transfer to serving dish, garnish with remaining chopped cilantro.
Step 5
Serve immediately.
