Chicken Pasta with Creamy Tomato Sauce

ingredients
For the Pasta
- 1 pound pasta
- 2 cups fresh broccoli florets
- 2 cubed chicken breast
- 2 tablespoon butter
- 1 teaspoon salt
- 1 teaspoon Italian seasoning

For the sauce:
- 3 tablespoon butter
- 1 can Tomato Love diced tomatoes, drained
- 1 can Tomato Love diced tomatoes, with juice
- 1/2 cup heavy cream
- 1 (8 ounce block) cream cheese, cut into 1-inch slices
- 1 teaspoon Garlic, minced
- 1 tablespoon Italian seasoning
- 1 cup parmesan cheese, shredded
- 1/3 cup olive oil
Method
Step 1
Preheat your oven to 375F degrees.
Step 2
Cook your pasta according to the directions on the box, then drain.
Step 3
Return pasta to the pot and along with broccoli florets. Cover with a lid to steam.
Step 4
Heat butter over medium heat in a medium skillet (I used cast iron). Add cubed chicken breast, salt, and Italian seasoning, and cook chicken thoroughly, about 7-9 minutes.
Step 5
Add cooked chicken to pot with pasta and broccoli and cover with a lid.
Step 6
Make the sauce. Add butter, both cans of Tomato Love Diced Tomatoes (remember to only drain one can!) and heavy cream to the pan you cooked the chicken in. Once warm, add cream cheese to the skillet, stirring continuously. Add minced garlic and Italian seasoning, and stir until all of the cream cheese has melted. Reduce heat to low and simmer for about five minutes to thicken the sauce a little bit, stirring occasionally.
Step 7
Once sauce has reached a thickened consistency, add it to the pot with pasta, chicken, and broccoli. Add parmesan and stir thoroughly.
Step 8
Transfer the pasta mixture to a large baking dish, drizzle with olive oil, and loosely cover with foil.
Step 9
Bake until cheese is melted and flavors combine, about 15-20 minutes
Step 10
Scoop into bowls, and serve immediately. Enjoy!

Note: use two cans of Tomato Love Mild Diced Tomatoes to keep the spice level down, or use original Tomato Love Original Diced Tomatoes for a little added zest! I actually use one of each!
