You can make a latke out of almost anything as evidenced by the feedfeed community (Brussels Sprout Latkes, anyone?)!

If you'd prefer to go traditional, here's our favorite tip:

For a crunchy latke-wrap the grated potatoes in a kitchen towel & squeeze out as much liquid as possible before combining the potatoes with the egg yolk, flour, salt and pepper. If you are of the persuasion to add onion, dice and sweat them first and cool before adding them to the mixture.

Sweet Potato Latkes With Pistachio Pesto

We haven't eaten potatoes in forever because we are team sweet potato. Sweet Potato Latkes with Pistachio Pesto --------------------------------------------- Latkes •1 large sweet potato, grated •1/2 small onion chopped •1/3 c coconut flour •2 large eggs, beaten •1 tsp salt •1/2 tsp black pepper •3/4 c coconut oil 1⃣stir together all ingredients except for oil 2⃣heat oil in skillet on medium-high 3⃣spoon potato mixture and flatten to patty. Cook about 1.5 mins on each side until golden 4⃣transfer latkes to paper towel to drain Pistachio Pesto •2 garlic cloves •1/2 c shelled pistachios •1 c loosely packed basil •1 tbsp lemon juice •1/2 tsp salt •1/3 c olive oil •1/4 c parmigiana reggiano cheese 1⃣pulse garlic in food processor 2⃣add nuts, basil, lemon, salt and pulse till chopped 3⃣add olive oil gradually thorough food chute till well combined 4⃣add cheese and pulse 2-3 times
