ingredients
- 2 1/4 cups All Purpose Flour
- 1/2 cup Oil of choice (Avocado, vegetable, grapeseed)
- 1/2 cup Sugar (or sweetener of choice)
- 3 Bananas
- 2 1/2 teaspoons Baking Powder
- 1 1/4 fresh (or frozen) Blueberries
- 2 teaspoons Vanilla extract
- 1 teaspoon Blueberry extract
- 1/2 teaspoon Salt
- 1 Flax egg ( or any form of egg replacer)
- 1/4 cup Plant Milk of choice (almond, oat, soy etc)
Method
Step 1
Preheat oven to 350F. Prep 9x5 nonstick loaf pan by using parchment paper or use a cooking spray then set aside.
Step 2
In a food processor, blend 3/4 cup of blueberries then set aside.
Step 3
In a small heated skillet, add the remaining of the blueberries to the pan with 2tbsp of sugar and about 1tbsp of lemon juice then cook it down until it becomes a jam like texture. Then transfer to a small bowl and set aside to cool down.
Step 4
In a large bowl, add the bananas and mash until its smooth (I also like to blend the bananas with the milk to get it as smooth as possible for this recipe).
Step 5
Add the oil and sugar in the bowl with the bananas then mix it all together. The add the vanilla, and blueberry extract (optional) and mix together.
Step 6
Add flax egg (combine 1Tbsp of ground flax seeds mixed with 2tbsp of water), then mix together. (You can also choose to use an egg replacer or 1 egg).
Step 7
In a separate medium bowl, add flour, baking powder, salt and lemon zest and mix together.
Step 8
Add the dry mixture to the wet mixture and gently mix without over-mixing. Then add the blended blueberries and about 1tbsp of the blueberry jam and gently mix it all together.
Step 9
Pour the batter into the loaf pan and then add the rest of the blueberry compote and fresh blueberries on top of the loaf for garnish.
Step 10
Bake in the oven for 50-55minutes or until its toothpick dry.
