Avocado Toast with Mushrooms in Miso Butter

ingredients
- 1 avocado
- 3 1/2 ounces baby bella or white button mushrooms
- 1 tablespoon butter
- 1 teaspoon miso paste
- 1 tablespoon sesame seeds
- Olive oil, to drizzle
- Salt and pepper, to taste
- Any bread of choice
Method
Step 1
In a dry skillet over medium heat, toast the sesame seeds. Transfer and reserve.
Step 2
In a skillet, melt the butter and miso paste, stirring to combine well. Add mushrooms and sauté in miso butter for 5 minutes.
Step 3
In a blender or by hand, mix the avocado with a drizzle of olive oil and salt and pepper until emulsified and smooth.
Step 4
Spread the avocado cream over your choice of bread. Tope with the mushrooms and sesame seeds. Add a drizzle of olive oil to finish.
