ingredients
For the Chicken and Rice
- 1 1/2 cups chicken bone broth
- 1 tablespoon unsalted butter
- 1 cup RiceSelect Royal Blend Rice
- Kosher salt, to taste
- 2 boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 tablespoon tamari
- 1 tablespoon sesame oil
- 1/2 teaspoon garlic powder
- 3 tablespoons cornstarch
- Avocado oil, for frying
- 2 tablespoons sesame seeds
- 2 tablespoons sliced green onions (or chives)
- Roasted or steamed broccoli, for serving
Method
To make the honey garlic sauce:
Step 1
In a small bowl, whisk together the tamari, honey, grated garlic, sesame oil, cornstarch, and water until smooth. Set aside.
To prepare the rice:
Step 1
In a medium pot, bring the chicken bone broth and butter to a boil. Stir in the RiceSelect Royal Blend Rice, then reduce heat to a low simmer. Cover and cook for 15 minutes. Remove from heat and let the rice sit, covered, for an additional 5 minutes. Fluff with a fork and season with salt if needed.
To make the chicken:
Step 1
In a large bowl, toss the chicken pieces with the tamari, sesame oil, garlic powder, and cornstarch until evenly coated.
Step 2
Heat a large skillet over medium heat and add enough avocado oil to generously coat the bottom.
Step 3
Once the oil is hot, arrange the chicken in a single layer, ensuring space between the pieces. Cook for 2-3 minutes per side until golden brown and crispy.
Step 4
Transfer to a wire rack or paper towel to drain.
Step 5
Wipe excess oil from the skillet and reduce heat to low.
Step 6
Pour in the honey garlic sauce and cook for 1-2 minutes until thickened.
Step 7
Add the chicken back to the pan and toss to coat in the sauce. Stir in the sesame seeds and green onions.
Step 8
Divide the rice into bowls and top with roasted or steamed broccoli. Add a generous scoop of honey garlic chicken and garnish with extra sesame seeds or green onions if desired.
