Wholesome Almond-Gingerbread Cookies/Honey cakes

  • 270 g sifted All-purpose flour
  • 125 g melted Honey
  • 70 g Brown sugar
  • 50 g melted Butter
  • 14 g Baking powder
  • 2 teaspoon ground Clove
  • 2 teaspoon ground Cinnamon
  • 2 teaspoon ground Ginger
  • 2 Eggyolks
  • 1 whole Egg
  • 1 tablespoon Vanilla pasta
  • 1 tablespoon Orange zest
  • 1 teaspoon Lemon zest
  • 1 Pinch of Salt
  • 200 g Peeled almond
  • 200 g Sugar
  • 1 teaspoon Lemon zest
  • 1 whole Egg
  • 1 pinch of Salt

Method

  • Step 1

    Melt the honey, butter, vanilla and sugar together, then mix ‘em well. Let it cool, otherwise when you add the eggs, you will get a nice scrumbled eggs.:)

  • Step 2

    Mix the dry ingredients and add the orange and lemon zest as well.

  • Step 3

    Is your butter-honey mixture cold enough? Then add the eggs and mix it until creamy and fluffy.

  • Step 4

    Now you can mix both the dry and wet mixtures together with a spoon. If it’s too sticky, add an extra tablespoon of flour.

  • Step 5

    It has to be kind of sticky and soft, so don’t be afraid; just take a piece of foil and cover your little dough carefully. Let it rest for 24 hours - or until you want to use it - in the fridge.

  • Step 6

    Let’s szart the almon pasta! Grab a food processor and add the almonds. Grind it until you get a crumbly-floury texture, then stop it, we don’t wanna get almond butter.:)

  • Step 7

    Now add the sugar, the salt and lemond zest and mix it until it starts forming a dough. Know take it out onto a kneading board and knead it for 1-2 minutes.

  • Step 8

    Grab a piece of foil again, cover it and put in the fridge for 24 hours.

  • Step 9

    The next day just preheat the owen to 180 degrees, put a sheet of baking paper on a baking tray.

  • Step 10

    Use some flour on your hands and start forming chestnut-sized balls from the dough, make it flat between your palms. Now take a piece of your almond pasta - a bit smaller piece - and roll it into a small ball. Now just fold it into your dough and place it on the baking tray.

  • Step 11

    Whisk one egg white and using a brush, “coat” the cookies with it. Now sprinkle with some sliced almonds.

  • Step 12

    Bake it for 15 minutes and enjoy!
