Asian Noodle Bowl
Last nights dinner was quick and easy to put together. I had some leftover Red Curry Broth from my lunch meal so I cooked up some buckwheat pasta, heated up the leftover broth, poured it into my favorite bowl, and added a few handfuls of sliced vegetables along with the pasta, and presto a delicious plant-based meal was ready to be enjoyed. The vegetables were still crisp but get perfectly warm after sitting in the hot broth for a few minutes. By just lightly heating your vegetables you can preserve many of the nutrients that would normally be lost if cooked longer. This is perfect for when you need to make something healthy in a hurry.
