ingredients

  • 1 small cup of brown rice soaked, drained and rinsed
  • 1 small piece of lamb bone with marrow
  • A pinch of ground white pepper
  • A pinch of ground black pepper
  • 2 pinches of smoked paprika
  • A pinch of ground cumin
  • A pinch of ground coriander seeds
  • A pinch of ground cardamom
  • A pinch of ground nutmeg
  • A pinch of ground cloves
  • A pinch of cinnamon
  • A pinch of sumac
  • A pinch of dried thyme
  • 2 small cups of water
  • A tsp of extra virgin olive oil
  • 2 tbsps of sunflower oil
  • 2 small red capsicums deseeded, halved and sliced
  • A tsp of salt
  • A half a tsp of dried thyme
  • A half a tsp of sumac
  • 2 tbsps of sunflower oil

Method

  • Step 1

    In a small pot pour in the rice, bone, spices, seasonings, thyme, water and oils. Cover and cook on a medium high heat for 30 min. Turn off when the water is nearly evaporated and let the rice absorb the water for 10 min or until it has fully absorbed it all.

  • Step 2

    Preheat the oven at 240 degrees Celsius. In a roasting tray with parchment paper combine the capsicums, salt, sumac, thyme and oil and roast the capsicums for 10 min or until they are well cooked.

  • Step 3

    Once everything is cooked grab a large plate and a medium sized bowl and fill the bowl with capsicums first and then the rice. Cover with the plate, flip everything upside down and let the dome cool for 3hrs - 6hrs or until it is fully cooled down. Once it has cooled down gently take the bowl off and enjoy!❀️❀️❀️
