ingredients

  • 4 medium sized whitings cleaned from the inside
  • 3 small carrots peeled and sliced diagonally
  • 1 spring onion stalk sliced diagonally
  • Two tbsps of sunflower oil
  • ¼ quarter small cup of water + more when needed
  • ½ tsp of ground black pepper
  • 1 ½ tbsps of lemon zest
  • Half a small cup of sunflower oil

Method

  • Step 1

    Heat a small pot with water and oil and add the vegetables when the pot starts to bubble. Stir and cook for 5 min. Not until vegetables are fully cooked and add more water when needed. After 5 min transfer the vegetables in a roasting tray with baking paper.

  • Step 2

    Preheat oven at 240 degrees Celsius. On a cutting board make cross marks on both sides of the fish and place them in the roasting tray.

  • Step 3

    In a small bowl mix pepper, lemon zest and oil together, pour over the fish, transfer the fish into the oven for 30 min or until the fish are fully cooked. Check occasionally.

  • Step 4

    After the fish is fully cooked take it out of the oven, serve it on a lovely platter of your choice and Shana Tova!
