ingredients

  • 2 small packets of cherry tomatoes cut in half
  • 1 medium sized zucchini cut into quarters and chopped into thick pieces
  • A tsp of salt
  • 1/4 tsp of ground black pepper
  • 1/4 tsp of ground cummin
  • A tsp of dried mixed herbs
  • 2 tbsps of grapeseed oil

Method

  • Step 1

    Preheat the oven at 240 degrees Celsius. Combine all the ingredients in a roasting tray with parchment paper and roast them in the oven for 20 min or until they are well cooked. Check ocassionally.

  • Step 2

    Once the salad is ready serve in a lovely bowl of your choice. Enjoy!😊
