ingredients

  • 3 medium sized Lebanese eggplants sliced into slightly thick pieces
  • 2 medium sized tomatoes sliced into wedges
  • One medium sized red capsicum deseeded and cut into small thick sticks
  • 4 medium sized garlic cloves crushed and chopped
  • 1 large tsp of salt
  • 1/4 tsp of ground black pepper
  • 1/2 small cup of olive oil

Method

  • Step 1

    Preheat the oven at 230 degrees Celsius. Combine all the ingredients in a roasting tray with parchment paper and roast the vegetables for 20 - 40 minutes or until they are cooked well. Check occasionally. Enjoy the salad while it's hot!😊
