Dates Stuffed with Sweet and Salty Sweet Potato Cream

Originally I wanted to make date snicker bars but instead this is what I ended up with! :)

ingredients

  • Thirty Four large medjool dates cut open and pitted
  • One small salted (not too salty) roast sweet potato cut into large chunks
  • A half a small cup of toasted sesame seed flour
  • Thirty four pinches of raw and grounded cacao powder for garnish

Method

  • Step 1

    Blend the sweet potato and sesame seed flour for a minute or until the mixture is smooth and then transfer the mixture into a small bowl and with a spoon mix for thirty seconds.

  • Step 2

    Using a piping bag or a plastic bag with a large hole (not too large), gently stuff each date with the mixture and gently sprinkle cacao powder on top of each stuffed date.

  • Step 3

    Place the stuffed dates on a serving dish of your choice and enjoy!
