I made up this recipe when I was in Israel. I needed to make food for the week. Used what was in the kitchen and this is what I ended up with... :)

ingredients
- 500g of chickpeas soaked overnight and rinsed and drained
- Two medium sized beetroots peeled and diced
- Three medium sized carrots peeled and diced
- One tsp of salt
- A pinch of black pepper
- A pinch of cinnamon
- A half a tbsp of coconut oil
Method
Step 1
Heat a large pot on medium heat with chickpeas and water and cover and boil them for ten minutes or until the chickpeas are slightly soft.
Step 2
Preheat oven at 230 degrees Celsius and into a roasting tray with baking paper mix the vegetables, spices and seasonings and oil and roast the vegetables for forty minutes or until they are soft. Once the vegetables are soft mix in the chickpeas and roast for ten minutes or until the chickpeas are slightly dry.
Step 3
Pour the chickpea salad into a lovely dish of your choice and enjoy!
