ingredients
- 1 large cauliflower soaked in salt water, rinsed and grated
- A tsp of salt
- 1/4 tsp of ground black pepper
- A tsp of dried mixed herbs
- 1 egg cracked and free of blood spots
- 2 tbsps of extra virgin olive oil
- 9 slices of tomatoes
- 9 pinches of salt
- 9 tsps of extra virgin olive oil
- 9 pinches of parsley soaked in salt water, rinsed and chopped finely for garnish
Method
Step 1
First combine the cauliflower and salt together in a mixing bowl and squeeze out and discard the liquid from the cauliflower and then combine the pepper, herbs, egg and two tbsps of oil.
Step 2
Preheat the oven at 240 degrees Celsius. Combine the sliced tomatoes, salt and oil together and place them on a flat roasting tray with parchment paper and roast for 5 min or until it is well cooked.
Step 3
On a flat roasting tray with parchment paper divide the latkes mixture into 9 servings and roast in the oven for 15 min or until they are well cooked. Check ocassionally and flip them in between.
Step 4
Once everything is done get out a flat lovely plate of your choice, place the latkes on, then the roast tomatoes and finally the parsley. Happy Chanukah!!!!!!!!!π―π―π―π―π―π―π―π―π―
