ingredients

  • 1 large cauliflower soaked in salt water, rinsed and grated
  • A tsp of salt
  • 1/4 tsp of ground black pepper
  • A tsp of dried mixed herbs
  • 1 egg cracked and free of blood spots
  • 2 tbsps of extra virgin olive oil
  • 9 slices of tomatoes
  • 9 pinches of salt
  • 9 tsps of extra virgin olive oil
  • 9 pinches of parsley soaked in salt water, rinsed and chopped finely for garnish

Method

  • Step 1

    First combine the cauliflower and salt together in a mixing bowl and squeeze out and discard the liquid from the cauliflower and then combine the pepper, herbs, egg and two tbsps of oil.

  • Step 2

    Preheat the oven at 240 degrees Celsius. Combine the sliced tomatoes, salt and oil together and place them on a flat roasting tray with parchment paper and roast for 5 min or until it is well cooked.

  • Step 3

    On a flat roasting tray with parchment paper divide the latkes mixture into 9 servings and roast in the oven for 15 min or until they are well cooked. Check ocassionally and flip them in between.

  • Step 4
