For the baked oats

  • 1/2 cup oats, blended into oat flour
  • 1/3 cup oat or almond milk
  • 20 grams protein powder (optional)
  • 1 1/2 teaspoons dairy-free yogurt
  • 1 1/2 teaspoons flax seeds
  • 1 teaspoon ground cinnamon
  • 1/2 ripe banana

ingredients

For the chocolate filling

  • 1 1/2 teaspoons dairy-free yogurt
  • 1 teaspoon maple syrup
  • 1 tablespoon cocoa powder

ingredients

For the cinnamon swirl

  • Nut butter (such as almond or peanut butter), as needed
  • Ground cinnamon, as needed to taste

Method

  • Step 1

    Preheat the oven to 350°F.

  • Step 2

In a bowl, combine the blended oat flour, milk, protein powder (if using), dairy-free yogurt, flax seeds, cinnamon, and mashed banana. Mix until smooth and creamy.

  • Step 3

Spoon half of the oatmeal mixture into a ramekin or oven-safe bowl.

  • Step 4

In a small bowl, mix the dairy-free yogurt, maple syrup, and cocoa powder until well combined. Add 1 tablespoon of this chocolate filling on top of the oatmeal layer.

  • Step 5

Spoon the remaining oatmeal mixture over the chocolate layer, spreading it evenly.

  • Step 6

Mix nut butter with a pinch of cinnamon. Using a piping bag or spoon, create a swirl pattern on top of the oatmeal mixture.

  • Step 7

Place the ramekin in the oven and bake for 15-20 minutes, or until the oatmeal is set and the top is golden.

  • Step 8

Let cool slightly before enjoying warm.

  • Step 9

For added texture, consider topping with fresh fruit or a sprinkle of nuts before baking.
