2 c flour
1/4 c sugar
2 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 c buttermilk
1/4 c melted butter
1 c blueberries, fresh or frozen
In a large bowl, sift flour, sugar, baking powder, baking soda & salt.
Beat eggs with the buttermilk & melted butter. Combine the dry & wet ingredients into a lumpy batter.
Heat butter in a skillet on medium heat. Spoon 1/3 c of the batter into the skillet and sprinkle with blueberries. Cook 2-3 minutes per side.
Top with syrup & more blueberries.
* for heart shaped pancakes, pour into a pancake mold during cooking or use a cookie cutter to cut shapes afterward.
