ingredients

  • 500 gram fresh Mix mushrooms
  • 1 clove fresh Garlic
  • 4 sprig of fresh Thyme
  • 2 sliced Red onions
  • 1 tablepoons Balsamic vinegar
  • 25 Butter
  • 2 teaspoo Olive oil
  • 1 roll Puff pastry
  • 1 tablesp Dijon mustard
  • Seasoning
  • 1 Egg wash
  • 150 Cottage cheese

Method

  • Step 1

    Slice your onions, heat up a pan and add a tablespoon of butter and a teaspoon of olive oil. Add your sliced onions, 2 sprigs if thyme, season and mix. Lower the heat, add the balsamic vinegar and contact cover with baking paper and lid over. Leave on low heat for 30min, stirring now and then.

  • Step 2

    Roll your pastry out in a thin rectangular shape, place on a grease baking sheet covered with baking paper, place your pastry on top, egg wash the pastry, cover with another sheet of baking paper and put another baking sheet over. It will prevent the pastry from rising while baking. Bake at 180°C for 20min.

  • Step 3

    While the pastry is baking, rinse and roughly cut your mushrooms. Chopped the garlic clove, add remaining butter and olive oil to a pan on high heat, add the mushrooms, the remaining sprigs of thyme, the garlic and sautéed for 5 minutes. Remove from heat and add your cottage cheese. Mix well.

  • Step 4

    Once pastry is cooked and golden, brush the top with the mustard, add the caramelised onions making sure you discarded the thyme sprigs and lastly top it up with the mushrooms mix.

  • Step 5

    Bake for another 10 minutes. Then let it cool down a bit and rop with rocket leaves and Parmesan shavings. Serve and enjoy!
