A Note from Feedfeed

These small, caramelized cakes from Bordeaux are made with a custard-like batter flavored with vanilla and rum. With a crispy exterior and a soft, creamy center, Cannelés are a unique and delicious dessert.

ingredients

  • 1/2 liter Milk
  • 50 gram Butter
  • 1 teasp Vanilla paste
  • 2 whole Eggs
  • 2 Egg yolks
  • 250 gram Sugar
  • 100 gram Flour
  • 1 pinch Salt
  • 50 milliliters Rum

Method

  • Step 1

    Bring your milk butter and vanilla paste to the boil.

  • Step 2

    In the meantime, whisk together your eggs, egg yolks, sugar, flour and salt together.

  • Step 3

    Slowly pour your hot milk mixture onto your egg mix, whisking vigorously to avoid lumps.

  • Step 4

    Leave to rest for at least 1h. Then add your rum, whisk again.

  • Step 5

    Grease your cannelés moulds thoroughly with spray & cook Fill your moulds to 3/4 with your batter and bake in a preheated oven at 260°C for 5 minutes then another 45min at 180°C.

  • Step 6

    The first 5 minutes create a crispy shell, it is a crucial step for a perfect cannelé.
