  • 1 pound spaghetti
  • 2 pints sun gold tomatoes
  • 5 garlic cloves, minced
  • Basil leaves (whole)
  • Parmesan block
  • Olive oil
  • Salt
  • Pepper

Method

  • Step 1

    Bring a pot of heavily salted water to a roaring boil.

  • Step 2

    While the water begins to boil, heat a large pan with olive oil.

  • Step 3

    Toss in the sun gold tomatoes (whole, no need to slice!), add a pinch of salt and let them “burst.” Should take about 5 minutes. You can aid in the bursting with the back of a spoon.

  • Step 4

    Add in the garlic and basil, letting the tomatoes simmer down and meld with the flavors.

  • Step 5

    Now add the spaghetti into the boiling water and cook al dente.

  • Step 6

    Make sure to reserve a small cup of pasta water.

  • Step 7

    By the time the pasta is al dente, the tomatoes have been on the stove for about 15 minutes and should be nicely simmering.

  • Step 8

    Transfer the cooked pasta directly into the tomato sauce (turn down the heat to low or off entirely), add in a little pasta water.

  • Step 9

    Add in freshly grated parmesan cheese. Mix to combine, adjusting any proportions to taste.

  • Step 10

    Plate the pasta and serve with a fresh sprinkle of cracked black pepper and dusting of parmesan.
