ingredients
- 1/2 cup pumpkin seeds (pepitas)
- 2 cups fresh parsley
- 2 garlic cloves
- 2 tablespoons nutritional yeast (optional but recommended)
- Juice of ½ lemon
- 1 tablespoon apple cider vinegar
- 2 tablespoons tahini
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 1/2 - 3/4 cup water (depending on desired consistency)
Method
Step 1
Add all ingredients to a blender or food processor. Start with ½ cup of water.
Step 2
Blend until smooth, adding more water as needed to reach your desired consistency.
Step 3
Taste and adjust seasoning, adding more salt, pepper, or lemon juice as needed.
Step 4
Transfer to an airtight jar and store in the refrigerator for up to 5 days.
