Next time you have overripe bananas sitting on your counter make these epic Chocolate Banana Muffins. These muffins are made with spelt flour, cocoa powder and are packed with a mix of white, milk and dark chocolate pieces - YUM!

ingredients
- 3 ripe bananas
- 2 eggs
- 1/4 cup maple sryup
- 1/4 cup brown sugar
- pinch of salt
- 1 1/2 teaspoons baking soda
- 1/4 cup coconut oil
- 1/4 cup milk
- 1/4 cup cocoa powder
- 1 1/3 cup flour
- 1/2 cup chopped chocolate, mix of white milk and dark chocolate
Method
Step 1
Preheat the oven to 350° F. In a bowl, add the eggs and whisk well. Mash your bananas and add to the bowl, along with maple syrup, sugar, oil and milk, whisk to combine.
Step 2
In another bowl, add your flour, baking soda, and salt. Gently fold in the wet mixture into your dry, making sure not to over mix. Fold in your chopped chocolate until combined.
Step 3
Pour 1/2 batter into a separate bowl and add the cocoa powder.
Step 4
Lightly grease a 12 cup muffin tip. Divide the cocoa batter evenly between the 12 cups, until it reached halfway. Top it off with the other half of the batter and top it off with more chopped chocolate.
Step 5
Place the muffin tin in the oven and bake for 20 minutes, or until a skewer comes out clean.
Step 6
Once baked, let them cool in the tin for at least 10 minutes.
