Many brands offer ready-made satay sauce, often made with ingredients like peanuts, coconut milk, soy sauce, and spices. However, if someone prefers a homemade version or can’t find it in stores, it’s also quite easy to make from scratch with common pantry ingredients like peanut butter, soy sauce, garlic, and lime juice.

For the Chicken Brochettes
- 6 boneless, skinless chicken thighs, cut into bite size pieces
- 3 tablespoons sweet soy sauce
- 1 tablespoon sesame oil
- 2 teaspoons fish sauce
- 1 dried chili, crushed
- 1 tablespoon satay sauce

- 1/3 cup (60 grams) Thai rice, uncooked
- 1 bunch fresh cilantro, chopped, plus more for garnish
- 1 bunch Thai chives, chopped
- 1/2 skin-on cucumber, sliced diagonally
- 1 lime, halved
- Crushed peanuts, for topping
- Satay sauce, for serving
Method
Step 1
In a mixing bowl, combine the diced chicken with sweet soy sauce, sesame oil, fish sauce, crushed dried chili, and satay sauce.
Step 2
Stir well to coat the chicken evenly. Cover and marinate in the refrigerator for at least 30 minutes or up to overnight for best flavor.
Step 3
While the chicken marinates, cook the rice according to package instructions until tender. Fluff with a fork and transfer to a mixing bowl.

Add the chopped cilantro, Thai chives, and juice of half a lime to the cooked rice. Mix until well combined and set aside.

Thread the marinated chicken pieces onto skewers or brochettes. Preheat an air fryer to 350°F and cook the brochettes for about 10 minutes, or until the chicken is golden and fully cooked through. Alternatively, grill or bake the brochettes at the same temperature until caramelized and tender.
