ingredients

  • 1 sea bass fillet
  • 2 tablespoons extra virgin olive oil infused with coriander
  • 10 raspberries
  • 1/2 lime
  • 1 teaspoon tabasco
  • 1 pinch of pink salt
  • 1/4 bunch of coriander
  • a few pomegranate seeds

Method

  • Step 1

    Slice your bass thinly, then arrange in the shape of a rose on a plate

  • Step 2

    Mix the olive oil, lime juice, Tabasco and pink salt in a bowl. Add 3-4 raspberries and mash.

  • Step 3

    Pour the marinade over the raw fish and let it "cook" for 2-3 minutes.

  • Step 4

    Garnish with coriander, pomegranate seeds and coarsely chopped leftover raspberries
