ingredients
- 20 ounces Zucchini Noodles
- 1 tablespoons Unsalted Butter
- 2 teaspoons Extra Virgin Olive Oil
- 4 minced Garlic Gloves, divided
- 3/4 tablespoon Peeled Shrimp
- Salt
- Pepper
- chopped Fresh Parsley Leaves
- 1/2 teaspoon Fresh Grated Lemon Zest
- 3 tablespoons Freshly Squeezed Lemon Juice (1 lemon)
- 1/8 Red Pepper Flakes
Method
Step 1
Melt butter & 1 teaspoon olive oil over medium head. Add the garlic & saute for 1 minutes. Add the shrimp, salt, & pepper & saute until shrimp have just turned pink (about 5 minutes, stirring often). Set aside.
Step 2
Add remaining oil & garlic to the pan, cook 30 seconds then add the zucchini noodles, salt & pepper. Cook 2 minutes, stirring.
Step 3
Over low heat add shrimp to the noodles, mix together. Once mixed add parsley, lemon zest, lemon juice, & red pepper flakes. Toss well to combine and enjoy!
