ingredients

  • 20 ounces Zucchini Noodles
  • 1 tablespoons Unsalted Butter
  • 2 teaspoons Extra Virgin Olive Oil
  • 4 minced Garlic Gloves, divided
  • 3/4 tablespoon Peeled Shrimp
  • Salt
  • Pepper
  • chopped Fresh Parsley Leaves
  • 1/2 teaspoon Fresh Grated Lemon Zest
  • 3 tablespoons Freshly Squeezed Lemon Juice (1 lemon)
  • 1/8 Red Pepper Flakes

Method

  • Step 1

    Melt butter & 1 teaspoon olive oil over medium head. Add the garlic & saute for 1 minutes. Add the shrimp, salt, & pepper & saute until shrimp have just turned pink (about 5 minutes, stirring often). Set aside.

  • Step 2

    Add remaining oil & garlic to the pan, cook 30 seconds then add the zucchini noodles, salt & pepper. Cook 2 minutes, stirring.

  • Step 3

    Over low heat add shrimp to the noodles, mix together. Once mixed add parsley, lemon zest, lemon juice, & red pepper flakes. Toss well to combine and enjoy!
