ingredients

  • 1 butterflied chicken
  • 2 teasopon salt and pepper
  • 3 tabelspoons BBQ rub

Method

  • Step 1

    Spatchcock your chicken by removing the spine and pressing flat, chest up. Rub all over with salt, pepper, and bbq rub of choice. Place on a sheet tray and refrigerate uncovered overnight.

  • Step 2

    Preheat your smoker to 250*F. Place wood chips of choice in, I used hickory, and once it is smoking, place the chicken into the smoker.

  • Step 3

    Smoke for 2.5 hours, and check internal temperature. Once the internal temp reaches 165*F remove from the smoker and rest 20 minutes.

  • Step 4

    After resting, slice and serve!
