- 3/4 cup sour cream
- 1/2 cup aioli (or avocado mayo)
- 1 teaspoon granulated garlic
- 1 teaspoon granulated onion
- 1 tablespoon chopped fresh dill
- 1 tablespoon chopped fresh chives
- 1 tablespoon chopped fresh parsley
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 3 tablespoons chili crisp, adjusted to taste

For the Burgers
- 2 pounds ground beef
- 2 egg yolks
- 3 garlic cloves, minced
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 6 ciabatta buns (or brioche rolls)
- 2 large tomatoes, thickly sliced
- 5 ounces arugula
- 6 small (or 3 large) burrata balls, halved
Method
Step 1
Prepare the Chili Crisp Ranch: In a small bowl, whisk together the sour cream, aioli, granulated garlic, granulated onion, dill, chives, parsley, salt, pepper, and chili crisp until well combined. Refrigerate until ready to use.
Step 2
Make the Burger Patties: In a large bowl, combine the egg yolks, minced garlic, salt, and black pepper. Add the ground beef and gently mix with your hands, being careful not to overwork the meat.
Step 3
Divide the mixture into 6 equal portions, forming each into a patty. Press your thumb into the center of each patty to prevent puffing up during cooking. Refrigerate until ready to grill.
Step 4
Grill the Burgers: Preheat a grill or flattop grill to medium-high heat. Sear the patties for 4 minutes on one side, then flip and reduce the heat to low. Cook for an additional 3-4 minutes, or until the burgers reach your desired level of doneness, a minimum of 160ºF for medium rare.
Step 5
While the burgers are cooking, lightly toast the ciabatta buns on the grill.
Step 6
Assemble the Burgers: Spread a generous amount of chili crisp ranch on both sides of each bun. Place a cooked burger patty on the bottom bun, followed by a slice of tomato, a small handful of arugula, and a ball of burrata. Gently slice open the burrata and press it down slightly.
Step 7
Season with salt and pepper, then top with the other half of the bun.
