ingredients
- 8 cups Serve with a sprig of thyme on top
- 1 dried, split peas, rinsed
- 1 large onion
- 3 carrots
- 3 stalks celery
- 1 jalapeno
- 3 baking potatoes
- 3 cloves garlic
- 2 teaspoons liquid smoke
- 1 Tablespoon garlic powder
- 1 Tablespoon onion powder
- 6 fresh thyme sprigs
- 1 teaspoon red pepper flakes
- 2 teaspoon sea salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- 1 bay leaf
Method
Step 1
Rinse and drain 1 pound of dried split peas
Step 2
In a large soup pot, saute onions and garlic until translucent
Step 3
Add a small amount of vegetable broth to prevent sticking
Step 4
Add all herbs and seasonings
Step 5
Add carrots, celery, and potatoes
Step 6
Add bay leaf
Step 7
Add split peas
Step 8
Pour vegetable broth over the top of all the ingredients

Stir
Step 10
Bring to a boil and stir, then reduce heat to simmer, and simmer uncovered for 1 hour, stirring occasionally
Step 11
Split peas will breakdown and create a creamy broth
Step 12
Add all ingredients to the base of the crockpot and stir
Step 13
Cover and cook for 8 hours on LOW or 4 hours on HIGH
Step 14
Taste and adjust spices to taste

Serve with a sprig of thyme on top
