lunch scene: bed of mixed baby greens, sautéed overwinter spinach, ribboned purple carrots, cucumber, mixed tomatoes, radish, avocado, baby sweet potato, homemade nut-free pesto + homemade black bean dip. Topped this bowl off with a bit of lemon juice and that was all the dressing it needed🍃

Happy Monday 🙃 woke up dreaming about this overnight chia/oat parfait that I made a few weeks back with layered peanut butter and granola on top! I made overnight oats with gf @bobsredmill oats, chia seeds, @califiafarms unsweetened almond milk, and a touch of maple syrup. In the morning I threw it in the @vitamix to blend until smooth. Layering it with @crazyrichardspb peanut butter and topping with granola made for a decadent parfait 😍 highly recommend giving this a try!!

Post Pilates smoothie last night 💜 the tacos really filled me up yesterday so I made this little purple smoothie for dinner: frozen blueberries, handful frozen zucchini, 1 scoop @alohamoment vanilla protein powder, coconut milk, 1 tbsp almond butter, and cinnamon! I added a little layer of @so_delicious unsweetened coconut yogurt and @wholefoods pistachios from the bulk section! (Also, my straw is from @preserveproducts and is non-toxic + plant based + compostable + made in the usa)🌱

Let's taco bout these tortillas I made from scratch with only 4 ingredients (recipe below) 🙌🏼 they are so amazing! I added red cabbage, avocado, tomato, and these mini beet and black bean burgers w/ a little lemon juice on top! I'm going to be making these tortillas all the time.. they're so easy: . . Spelt tortillas: 1.5 cups spelt flour 1/2 tsp baking powder 1/2 cup warm water 3 tbsp olive oil . Mix dry ingredients and then mix in wet ingredients, using your hands to fully combine everything. Let sit for 30 min in a bowl. Cut into 6 even pieces, roll each into a bowl and use a rolling pin (or I used my @swellbottle water bottle...) to make thin tortillas. In pan on medium heat, put a tortilla in until it starts to bubble and flip right away. Only 10 ish seconds on each side. Wrap in towel to cool before using them. Enjoy!!

I just got back from a trip and only had 1 egg, 1 veggie burger, and 1 avocado in my fridge. So for lunch, I had 1 egg, 1 veggie burger, and 3/4 of an avocado. Gotta save something for a snack, right? 🍳😍
