  • 1 Bartlett pear, halved lenghtwise
  • 1 slice Brie, chopped
  • 1/4 lime, juiced
  • Olive oil, for drizzling
  • Fresh rosemary leaves, for topping
  • 1 tablespoon honey
  • 1 tablespoon toasted pine nuts

Method

  • Step 1

    Preheat the oven to 390°F.

  • Step 2

    Cut the pear lengthwise in half and use a spoon to scoop out the center.

  • Step 3

    Place the pear halves, cut side up, in a baking dish.

  • Step 4

    Top each pear half with chopped Brie, fresh rosemary leaves, and a drizzle of olive oil. Squeeze lime juice over the top and finish with a generous drizzle of honey.

  • Step 5

    Bake in the preheated oven for 25-30 minutes or until the pear is golden brown, and the cheese has melted and developed a golden crust.

  • Step 6

    Once out of the oven, sprinkle the baked pears with toasted pine nuts.

  • Step 7

    Allow the dish to cool for a few minutes before serving.
