When you layer three of your favorite things ???????? Shortbread #cookie base with peanut butter and topped with decadent #chocolate. And did I mention it’s #vegan!? #recipe below Shortbread: Preheat oven to 350°F • 1 cup all purpose flour • 1/4 cup of sugar • 1/2 cup vegan butter • pinch of salt In a food processor mix all ingredients. Press dough into a parchment lined 8x8 baking dish and bake for appx 20 mins. Peanut butter layer: Once the shortbread has cooled for 30 mins, layer with desired amount of peanut butter (or any nut butter!) Vegan chocolate: Over a double boiler, melt • 1/2 cup coconut butter • 1/2 cup coconut oil • 1/2 (+ more) cocoa powder • 1/4 cup maple syrup. This is a little bit of what I call a wing-it stage. Depending on the consistency of the coconut mixture, you may need more or less cocoa powder and depending on the level of sweetness you can adjust the maple syrup amount. Once the chocolate is all melted and mixed, pour over peanut butter layer. Put in the freezer to cool completely, 1 hr. You guys - I don't bake. Simply put, I don't have patience or self control (raise time? cooling time? whaaaaaaat?) to be a successful baker. I look at this as an advantage and a way to keep my insanely prevalent sweet tooth at bay. But then this happened... I came across a recipe dubbed "The worlds easiest cinnamon buns", and as one to never turn down a challenge, I took the bait. I can report back that this is in fact the easiest recipe, and with a few adaptations of my own, I've come up with a banging recipe and feel as if I can officially call myself a quasi-baker (dude, I used yeast - that's pretty major). Oh and by the way, these are vegan!

Gingerbread Cake Topped With Apples And Caramel
Not going to lie folks, but pumpkin pie was never what I'd beeline to come dessert time during the holidays; however any sort of "apple" something (with cinnamon of course) sure was. This year I stepped it up a notch and combined two favorite things; caramel apple and cake! This is a glutenfree gingerbread cake topped with mini apples and caramel sauce.
