Mini Cherry Tarts With Honeyed Goat Cheese

Recipe From Kassandrah:
I use Martha Stewart's pie dough recipe, and only use 1/2 (it's enough for a pie top and bottom).
Cut in hal and pit a bag o local cherries, you'll have a bit more than 1 cup once prepped.
6 oz goat cheese
1/3 C honey
1 tsp vanilla extract
Pinch of cinnamon
1/2 C sugar + 1/2 C water + some cherries smashed in to make a simple syrup glaze.
Makes 4 mini 4" Tarts
Preheat oven to 350
Line the mini tart pans with pie dough and keep in fridge until ready to fill.
Pour sugar, water, and smashed cherries in small sauce pan and bring to a boil, lower heat, and let reduce to make a simple syrup. Set aside.
Mix the goat cheese, honey, vanilla extract, and cinnamon in a food processor until smooth.
Fill the lined mini tart pans with thegoat cheese mixture until covers the bottom (about 1/8" thick).
Now place the halved cherries in the pans until covering the entire circumference.
Brush the top of the cherries with the cherry simple syrup until coated evenly.
Place in the oven and cook for about 15-20 minutes, or until the dough starts to turn golden brown.
