ingredients
- 1 1/4 cup cake flour
- 1 1/4 cup butter, softened + extra for coating pan
- 3/4 cup sugar
- 1/2 cup flour
- 3 eggs
- 1/8 cup milk
- 2 tablespoons lemon juice
- 1 1/2 tablespoon poppy seed
- 1/2 tablespoon baking powder
- Lemon Glaze Ingredients
- 1 cup confectioners sugar
- 4 teaspoon milk
- 2 teaspoon light corn syrup (optional)
- 1/4 lemon juice
Method
Step 1
Mix together sugar and butter until creamy.
Step 2
Add eggs and lemon juice to the mixture and blend.
Step 3
Combine the cake flour, all-purpose flour, and baking powder. Add to batter and blend until thoroughly corporated.
Step 4
Butter bundt cake pan.
Step 5
Pour batter into bundt pan.
Step 6
Bake 350 for 40 minutes or until the cake tester comes clean.
Step 7
Set on a wire rack to cool.
Step 8
Meanwhile, prepare the glaze by combining confectioners sugar, milk, lemon juice, and corn syrup. Set aside.
Step 9
With a spatula, carefully separate the sides of the cake from the cake pan. Flip cake onto a wire rack and allow to thoroughly cool before icing.
Step 10
To decorate, drizzle glaze back and forth over the bundt cake. Quickly place bunny candies around the cake before the glaze hardens and sprinkle nonpareils over the top.
Step 11
Slice and serve. Enjoy!
