Sauteed Greens with Eggs

ingredients
- 5 cups mixed greens (spinach, arugula, radicchio)
- 1 tablespoon unsalted butter
- 1 bulb fennel, chopped
- 3 large eggs
- 1/4 cup feta cheese, optional*
Method
Step 1
Melt butter into a 10-inch skillet over medium heat. Add in the fennel and cook until tender, 5-7 minutes, stirring often. Season with salt and pepper.
Step 2
Add the greens to the skillet. When all the greens are wilted, create small wells for the eggs to sit in. Place eggs in wells. Top with feta cheese.* Cook, covered, until the whites are set, about 5 minutes. Enjoy!
