ingredients

  • 1/2 cup Mexican Crema, (or sour cream)
  • 1/2 cup mayo
  • 1/4 cup minced cilantro
  • 1 clove minced garlic
  • 1/4 teaspoon ground chili pepper
  • 2 teaspoons zest of a lime
  • 2 tablespoons lime juice
  • 1/2 cup crumbled cotija cheese
  • Lime, cut into wedgets

Method

  • Step 1

    In a bowl, whisk together crema (Mexican sour cream), mayo, chopped cilantro, minced garlic, ground chipotle pepper, lime zest and lime juice.

  • Step 2

    Grill the corn until charred on all sides, about 3-5 minutes. Brush or spoon the crema mixture onto the corn.

  • Step 3

    Finally, roll in crumbled cotija cheese and serve with lime wedge!
