ingredients
- 1 whole Chicken (spatchcock)
- 2 cups Orange Juice
- 1 cup Lime Juice
- 5 cloves Garlic (smashed)
- 1 tablespoon Cumin
- 1 tablespoon Oregano
- 2 teaspoons salt
- 2 teaspoons pepper
- 1 1/2 tablespoons Orange Marmalade
- 1 tablespoon sugar
Method
Step 1
Combine orange juice, lime juice, garlic, cumin, oregano, salt, and pepper into a large bowl and whisk to combine. Add chicken to bowl, cover and leave in fridge for 3-8 hours.
Step 2
Preheat oven to 375 degrees F. Remove chicken from marinade and pat dry. Place chicken (skin side down) in an oiled oven-safe skillet on medium-high heat and brown skin on both sides. Place skillet in oven and cook for 30 minutes.
Step 3
Strain marinade into a medium saucepan and add orange marmalade, sugar, and 1 pinch of salt. Whisk to combine.
Step 4
Reduce the sauce for 10-12 minutes on medium heat, or until glaze coats the back of a spoon.
Step 5
Remove chicken from oven and brush skin with glaze. Place chicken back in the oven for 3-5 minutes.
Step 6
Remove chicken and serve! Best with black beans and rice.
