ingredients
- 4 large egg whites, room temperature
- 1/4 cup dark brown sugar
- 3/4 cup white sugar
- 1 pinch salt
- 1/2 teaspoon vanilla extract
- 2 tablespoons black cocoa powder
Method
Step 1
Preheat oven to 300 degrees F. Line a baking sheet with parchment paper. Draw an 8 inch circle on the parchment paper and then flip it over.
Step 2
Mix egg whites, dark brown sugar, white sugar, and salt in a bowl set over a pot of simmering water. Whisk until sugars are dissolved. Remove from heat and add in vanilla. Continue to whisk until stiff peaks form.
Step 3
Sift black cocoa powder over mixture. Gently fold together with rubber spatula or large spoon until no streaks of cocoa remain. Place mixture on 8 inch drawn circle. Spread out, using the circle as a guide, into an even round with a shallow well in the center.
Step 4
Place sheet pan in the oven and bake until dry to the touch, about 1 hour. Remove from oven and cool, preferably on a wire rack. Once cooled, top with whipped cream and favorite fruit.
